The most delicious tripe sandwiches are from Florence Italy “Lampredotto”

These sandwiches are one of my top foods and most memorable experiences from our Italy trip. It’s called Lampredotto (“con panino”) and it’s made specifically from the 4th and final stomach of the cow. Classically thought of as lower class dish or peasant food since it’s one of the cheapest cuts to buy and often left over from what nobles eat, it’s become a very popular traditional street food in Florence.
The lining of this stomach (tripe) is boiled in a vegetable stock for hours before being roughly chopped and paired with a Tuscan bread, a traditional green sauce and chili oil. Because it’s slow cooked, the tripe becomes super tender, absorbing all the flavours of the broth and practically melts in your mouth. The 4th stomach, also called abomasum, has a unique texture from the other 3 stomachs with two distinct linings. One darker, purplish ridged lean layer, and a fattier layer.
I was surprised to see so many Asian tourists waiting in line at this popular store called Da Nerbone located in on the ground floor of the Central Market (Mercato Centrale) in Florence. I overheard them speaking mandarin to each other and saying that the tripe looked very similar to what they serve in China and they love eating jt so maybe that’s why! I also do love tripe myself so this was delicious to me, but the texture might be hard to get used if you don’t eat it often. A sandwich was €5 and you can also get just the broth and bread on the side which is what the locals do with big a glass of Tuscan wine. HIGHLY RECOMMEND TRYING IT IF YOU’RE IN FLORENCE ITALY!
