How to make Migas

Ingredients:
• ½ cup cooking oil
• ½ yellow onion (diced)- WIC approved
• 2 Roma tomatoes (diced)- WIC approved
• 6 corn tortillas- WIC approved
• Deli meat (optional)
• 6 eggs- WIC approved
• 1 cup Mexican cheese- WIC approved
• 1 avocado- WIC approved
• Salt and pepper to taste
Directions:
1. Wash produce (tomatoes and avocado) and dice. Set aside
2. Cut corn tortillas into desired size
3. Optional: cut deli meat into desired size
4. In a bowl, beat eggs
5. Set stove to medium heat and in a pan add cooking oil and swirl around to coat pan
6. Once oil is warm enough, add the diced onions and sauté until golden color
7. Add corn tortillas and sauté until crispy
8. Continue by adding tomatoes and deli meat, and sauté
9. Pour beaten eggs into pan and stir around until cooked
10. Set stove to low heat and sprinkle ½ cup shredded cheese to migas and mix
11. Remove from heat and plate
12. Garnish with the remaining cheese and add avocado or salsa
13. Enjoy!
