There’s dinner… and then there’s a roast chicken like this.
This Lemon Rosemary Roast Chicken is built on simple ingredients and quiet confidence. Halved onions, garlic, and lemons soften underneath while potatoes absorb every drop. A splash of Riesling, a handful of olives, fresh rosemary, and time in the oven bring everything together into a deeply golden, naturally rich pan sauce — no flour, no thickening, just what the chicken gives back.

Roasted in my Henckels roasting pan.
INGREDIENTS:
1 whole chicken
Salt and freshly ground pepper
1 onion, cut into eights (pole to pole)
1 head garlic, halved
1–2 lemons, halved
Baby potatoes
Handful of olives (I used Castelvetrano olives)
Fresh rosemary
Olive oil
Riesling (or other dry white wine)
NOTES:
Let the pan do the work.
Let the chicken rest 15-20 minutes before carving.
Give the potatoes space.
Take your time when carving.
