Chinese Garlic Prawns & Rice Noodle
Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
10 Whole Tiger Prawns
70g Vermicelli Noodles
10 – 15 Cloves Garlic (60g in weight)
2 Red Chilli Peppers
2 Spring Onions
1 Tbsp Sugar
3 Tbsp Sesame Oil
4 Tbsp Light Soy Sauce
2 Tbsp Peanut Oil
Salt To Taste
Method:
1. Soak the noodles in cold water for 10 minutes
2. Meanwhile, trim the prawns, cut open the prawns at the back but not the heads and tails, remove intestines
3. Finely chop the garlic, chilli and the white part of the spring onion
4. Finely chop the green part of the spring onion
5. Heat the peanut oil in a wok
6. Place garlic, chilli and the white part of the spring onion into the wok, fry on low heat for 2 minutes
7. Turn off the heat, add pinch of salt, sugar, sesame oil, light soy sauce, mix well as this is the sauce for later
8. Layer the soaked noodles in a dish
9. Arrange the prawns over the noodles, Evenly pour the sauce over the prawns with a spoon
10.Place into a steamer, cover and steam for 8 to 10 minutes after the water reaches to the boiling point
11.Remove from steamer, garnish with the green part of spring onion and serve hot
