Join me as I take you through the steps of preparing, marinating, and roasting this delicious dish in a wood-fired oven, which you can also recreate in your conventional oven at home. Get ready for a culinary adventure filled with rich flavors and aromatic herbs!

List of Ingredients
1 Duck

Filling
2 pears (peeled and quartered)
Zest from 1/4 of a lemon
Fresh sage (chopped)
Fresh rosemary (chopped)
Pancetta (or bacon)
Salt
Pepper

Marinade
Parsley
Salt
Pepper
1 large clove of garlic
Smoked paprika (1/2 teaspoon)
Turmeric
Lemon zest

Vegetables
1 green pepper
1 red pepper
Potatoes
Carrots
1 red onion
1 white onion

Cooking Instructions
Prepare the Filling: Mix pears, lemon zest, sage, rosemary, pancetta, salt, and pepper.
Stuff the Duck: Fill the duck with the prepared mixture and secure it with metal skewers.
Create the Marinade: Combine parsley, salt, pepper, garlic, smoked paprika, turmeric, and lemon zest.
Marinate the Duck: Rub the duck with the marinade thoroughly, ensuring even coverage.
Prepare the Oven: Preheat the wood-fired oven to 180-200°C. For conventional ovens, preheat to the same temperature.
Cook the Duck: Place the duck on a spit in the wood-fired oven, turning it every 10 minutes for even cooking. For conventional ovens, turn the duck once after one hour.
Prepare Vegetables and Potatoes: Slice potatoes, peppers, and onions. Prepare a butter marinade for the potatoes with parsley, garlic, salt, pepper, and olive oil. Arrange vegetables in a roasting tray.
Roast Vegetables: Place the roasting tray under the duck to catch the juices. Cook for 45 minutes until vegetables are tender.
Serve: Let the duck rest for 10-15 minutes before carving. Serve with roasted vegetables and potatoes.
