Ingredients:

2 cups rolled oats
½ tsp. ground cinnamon
½ cup peanut butter
⅓ cup maple syrup or honey
1 tsp. vanilla extract
pinch of salt
½ cup jam
⅔ cup chocolate chips
1 tsp. peanut butter

Directions:

1. Line or grease a muffin tin.

2. In a large bowl, mix oats, cinnamon, peanut butter, maple syrup/honey, vanilla, and salt until well combined. Press the mixture firmly into the muffin cups.

3. Spread an even layer of jam on top of each cup and freeze for 10 minutes.

4. In a microwave-safe bowl, heat the chocolate chips and 1 tsp. of peanut butter in 30-second intervals, stirring after each interval, until melted. Spread evenly over the jam.

5. Refrigerate for 30 minutes and enjoy!

Makes: 12 cups
