🦐 Prawn Dum Biryani
Ingredients For the rice: :
Basmati rice – 2 cups (soaked 30 mins)
Water – 6 cups
Bay leaf – 2
Mace -2
Black cardamom – 1
Cloves – 4
Cinnamon – 1 stick
Salt – 1 tbsp
Ghee - 1tbsp
For the prawn masala:
Oil – 3 tbsp
Ghee – 2 tbsp
Onions – 2 large, thinly sliced
Tomatoes – 2 medium, chopped
Green chilies – 2 slit
Ginger garlic shallots paste – 5tbsp
Yogurt – ½ cup (whisked)
Red chili powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Garam masala – 1 tsp
Fresh coriander – ¼ cup, chopped
Mint leaves – ¼ cup, chopped
Salt – as needed
For layering:
Warm milk – ¼ cup
Saffron strands – 8 to 10 (or ½ tsp food color)
Extra mint & coriander leaves – few
Method
Step 1: Cook the rice
Boil water with salt and whole spices.
Add soaked rice and cook till 70% done (grains should be firm, not mushy).
Drain and set aside.
Step 2: Prepare the prawn masala
Heat oil + ghee in a pan. Fry onions till golden brown. Remove half for garnish.
Add ginger garlic paste, fry till the raw smell goes.
Add tomatoes, green chilies, turmeric, chili powder, coriander powder, and salt. Cook till masala thickens.
Stir in yogurt, then add prawns. Cook on medium flame for 5–6 minutes (do not overcook prawns).
Add garam masala, coriander, mint, and lemon juice. Mix well.
Step 3: Layer the biryani
In a heavy-bottomed pot, spread half the prawn masala at the base.
Add half of the cooked rice over it.
Sprinkle fried onions, cashew nut, saffron milk, mint, and coriander.
Repeat with the remaining prawn masala and rice, finishing with garnish.
Step 4: Dum cooking
Cover tightly with a lid (seal with dough or a heavy lid).
Place on very low flame for 20–25 minutes, or keep on a tawa to avoid burning.
Let it rest for 10 minutes before opening.
Serving
Fluff gently, serve hot with raita, papad, and salad.
