Funeral Potatoes- Delicious Cheesy Hashbrown Casserole

Hello Everyone! I made a delicious hash brown casserole for a Thanksgiving party but this dish can go with anything! I have also heard this dish called funeral potatoes because it was a popular dish people would take to funerals. I hope you enjoy this recipe and have a Happy Thanksgiving!
Cheesy Hashbrown Casserole
Ingredients:
-30 oz frozen hash brown (thawed)
-1 medium onion ( or 1/2 cup diced)
-2 crushed sleeves of Ritz crackers
*May substitute 2 C panko, crumbs, crushed potato chips or Seasoned bread crumbs
-10 and 1/2 oz can of cream of chicken soup
-1teaspoon of finely minced garlic
-1 stick of butter ( divided)
-4 cups of sharp cheddar cheese (divided)
1 C of grated Parmesan cheese
-1 C of sour cream
1 teaspoon salt
-1 teaspoon of paprika
-1 teaspoon pepper
1/4 tsp parsley flakes (optional)
Instructions:
-Cut 2 Tbsp off stick of butter & melt in skillet add diced onion, sauteed until translucent and soft. Add in garlic and saute just until Incorporated together with onion, set aside.
In a large bowl combine potatoes and spices, toss together until well mixed.
-Add in sauteed onion,toss together with potatoes , stir in 2 cups of sharp cheddar cheese, parmesan cheese and one cup of sour cream, cream of chicken soup and mix well.
-In 9x14 oblong casserole spread potatoes evenly.
-Top with 2 cups of grated sharp cheddar cheese evenly.
-Melt the rest of your butter the same saucepan you sauteed onion.
In a storage bag crash one sleeve of Ritz crackers in pan of butter until coated.
-Top cheese with crumb mixture and Bake at 350° 40 minutes until topping is golden and edges of cheese are bubbly.
