One pan, bold Mediterranean flavors 🍤🍋
This One-Pan Mediterranean Shrimp is bright, savory, and incredibly easy to make. Juicy shrimp, roasted vegetables, and briny olives come together with herbs and lemon for a balanced, weeknight-friendly meal. Minimal prep, minimal cleanup—maximum flavor.

Ingredients:
•1 lb jumbo shrimp, peeled, deveined, and cooked
•1 bunch fresh asparagus
•10 oz cherry tomatoes, whole
•2 Tbsp olive oil, divided
•3 cloves garlic, minced
•1 red onion, sliced
•2 tsp dried oregano
•2 tsp smoked paprika
•1/8 tsp ground black pepper, to taste
•Juice of 1 whole lemon
•2/3 cup black olives, pitted
•1/2 cup reduced-fat feta cheese
•1/3 cup fresh parsley or cilantro, chopped
Instructions:
1️⃣ Preheat oven to 450°F.
2️⃣ In a large bowl, toss shrimp with 1 Tbsp olive oil, garlic, oregano, smoked paprika, black pepper, and lemon juice.
3️⃣ Trim asparagus and arrange on a baking sheet. Add sliced red onion and cherry tomatoes, drizzle with remaining 1 Tbsp olive oil, season lightly, and toss to coat.
4️⃣ Bake vegetables on the middle rack for 10 minutes.
5️⃣ Add seasoned shrimp to the pan, stir gently to combine, and bake for an additional 5 minutes.
6️⃣ Remove from oven and sprinkle with feta, olives, and fresh parsley or cilantro. Finish with an extra squeeze of lemon before serving.
