Many of our recipes like spice powders and powders(podis) that we eat with rice, need roasted lentils and spices. The traditional way of roasting in a kadai involves using oil(of course dry roasting is also possible), but it definitely takes time and our manual intervention of stirring at regular intervals to avoid burning.
The same thing when done in a microwave is effortless and less of a hassle. Here too, we have to stir in between, but it is not difficult. Also, it is quick as you can see in the video as I have not roasted in the microwave mode but the combination of microwave and grill.
Why roasting:
Roasting enhances flavour, increases shelf life and is a must for making powders. You get commercially sold powders like dhaniya(coriander seeds), jeera(cumin), pepper, red chilli etc. But these are ground raw and hence the shelf life is limited, not only that, they have to be added in the recipes at a very early stage of cooking.
Roasted and ground powders last long, are tastier and above all can be added at any stage of cooking.
In this video, I have shown roasting 4 different lentils - udad dal, chana dal, tur dal and roasted gram dal. I have used these roasted dals in making idli/dosai milgaipodi(karam powder); an accompaniment to idli, dosa, pesaraattu, adai etc. I enjoy eating it along with roti and bread too.
I also make paruppu podi with roasted turda and roasted red chillies and black pepper. I'll be showing the roasting of red chilli, pepper, dhaniya, jeera and other items in my forthcoming videos. Please keep watching!
