The Benefits of Soaking Nuts and Seeds include:
•Neutralize enzyme inhibitors
•Increase the amount of absorbable vitamins
•Reduce phytic acid, which inhibits the absorption of vital minerals
To do this well, you need a dehydrator set between 105-115 degrees so the vitamin-producing enzymes in your soaked nuts remain intact. If you don't have a dehydrator, you can try an oven, but be aware that heating your seeds and nuts above 115 degrees will destroy some of the vitamins and enzymes.
