Cassava leaves soup is a Liberian local dish that is delicious and flavorful. It is made with grind cassava leaves, groundnut pastes/okra/red malabar spinach(water grains) and pepper, onions, (local black pepper, garlic & ginger)-(optional).
Ingredients for cassava leaves soup
2 cups grind cassava leaves
1 1/2 cup red palm oil
1 medium onion
1/4 cup pepper
3 season cubes
1/2 tsp local black pepper
1 tsp black pepper
1 half dry fish
A whole half dry meat
2 tsp soda
2 tbsp garlic & ginger paste
1 bunch of red malabar spinach/water grains
5 cups water
Tips
Use fresh cassava leaves for the best flavor.
Use a good quality red palm oil.
Put enough water on the cassava leaves after stimming to remove the raw cassava leaves aroma.
Serve with favorite side, such as rice to enjoy is properly.
Cassava leaves soup is a Liberian soup. It is a seasoned food with unique Liberian blend local spices(cooking soda, red malabar spinach/water grains, local black pepper).
