To prepare the breadfruit for a breadfruit lasagna:
The breadfruit needs to be fully mature. It may be a bit ripe; the riper and more soft fruit will be sweeter. Do not use an over-ripe one; it should not be too soft when you check it for ripeness.
Wash the fruit properly. The breadfruit may be baked in the oven, preferably whole. Once fully cooked you should be able to pierce it easily with a sharp knife. This should take about an hour on average, according to size and ripeness.
Once cooled, cut the breadfruit in quarters, remove the core with a knife, then peel it discarding the skin. Slice the fruit in 1/4 inch thick slices.
From there you may follow your favorite lasagna recipe substituting the baked breadfruit for the noodles.
