In the video two recipes: stewed cuttlefish and spahetti with eggless shellfish ink and press.
The dough of the pasta for the press contains less liquids than that worked by hand.
Cuttlefish are a family of marine cephalopod molluscs found in tropical-temperate waters.
They have 10 retractable circumoral appendages: 8 arms of equal length and 2 long appendages equipped with toothed suckers, used for defense and often for reproduction]. The animal also has protruding eyes with a very developed and W-shaped pupil. The largest species do not exceed 50 cm, and can reach 12 kg in weight. They have an internal shell called "cuttlefish bone" and an ink bag, placed near the anus, which is expelled when the cuttlefish feels threatened.
They have a strong mimetic ability, and can change their color, thanks to the presence in the dermis of a rich network of chromatophores, from brown to black, from yellow to red.
Some species have bioluminescence.
They feed on crabs, small fish, shrimp, water worms, small octopuses and other mollusks. They are generally preyed upon by dolphins, sharks, large fish, seals and other cuttlefish.
The dark colored eggs are laid in clusters and are commonly called "sea grapes".
During reproduction, if the male of the cuttlefish is rejected or removed from other dominant males, it tends to mate anyway assuming the same color as the female, thus approaching the same females without arousing suspicion in the dominant males to fertilize them by surprise.
The species of the Sepiidae family have a tropical-temperate distribution, with an unusual biogeographical pattern: they are in fact present both on the western coasts of the Pacific and on the eastern coasts of the Atlantic, as well as in the Mediterranean basin, but are absent on both coastal slopes of the Americas.
They are benthic organisms, that is, they live in the seabed. They can be easily found both on sandy and rocky bottoms; they generally prefer the shallow depths of the continental shelf, but up to 600 m have been reported.
