Charcoal Smoked Creamy Chicken
Servings-4
Ingredients
-500g Chicken Boneless or on bones
-1 cup thick coconut milk
-1 cup thick yogurt
-4 large size onions sliced fried and caramelized
-2 tbsp oil,2 tbsp ghee,3 tbsp butter
-KEEP DRY SPICES READY
-11/2 tsp hot red chili powder
-1/2 tsp cumin powder
-11/2 tsp coriander powder
-1/3 tsp turmeric powder
-1/2 tsp garam masala powder
-1/2 sugar (optional)
-Salt to taste
-Make White paste
-6 almond,5 walnuts, 8 cashews
Blanched or soaked overnight and make a paste and set aside
-Make Green paste
-5 green chilies
-2” ginger
-1/2 lemon juice
-6-8 small garlic
-For Smoking the Chicken
(small piece coconut shall/or charcoal
-1/2 tsp ghee
-Clean the chicken pieces remove excess water and marinate with
Yogurt, green paste,white paste, dry spices, sugar (optional),coconut milk, Browned onions and onion cooked oil also melted butter
-salt to taste
-mix well and set aside for 1 or 2hrs
Overnight even better
-After 2 hrs, transfer to a wide pan -Turn on the flame on medium heat
close the lid and cook for 5 minutes then on low 35-40 minutes until chicken pieces nice ender and cooked
-Please do keep eye on the dish stirring them now and then
-Turn off the flame do not open the lid for 10 minutes
-After 10 minutes smoke the chicken gravy
-SMOKING THE CHICKEN GRAVY
-Take a small steel bowl or aluminum foil
-Take a small piece of charcoal or coconut shall and heat it till it becomes red hot
-Using tongs, transfer it inside the steel bowl or aluminum foil and place it in the centre of the chicken gravy
-Carefully pour half a teaspoon of melted ghee over the hot charcoal.
The charcoal will begin to profusely smoke cover the dish with a lid immediately and allow the chicken gravy to marinate for at least 10 minutes.
-When done remove the charcoal along with the foil
-Enjoy with Butter Naan, Ghee rice, Chapati’s
