排骨糯米飯Steamed Sticky Rice (glutinous rice ) with Pork Ribs
材料有 一條肉排, 糯米, 一隻雞蛋, 蔥, 蒜頭The ingredients are a steak, glutinous rice, an egg, shallots, garlic
首先把糯米洗乾淨, 分量隨意, 今次我們用500克First wash the glutinous rice, the amount is random, this time we use 500 grams
這個餸菜做完後可以當飯吃, 非常方便This dish can be eaten as a meal after cooking, which is very convenient
糯米洗乾淨後, 要浸水大概三個小時After washing the glutinous rice, soak it in water for about three hours
把肉排切定小塊Cut the Pork Ribs into small pieces
清洗肉排, 要用豆粉水浸, 和清洗以去除碎骨和血水To clean the pork ribs, soak it in corn flour water, and wash to remove small bones and blood
用紙或乾布 抹去多餘水份Wipe off excess water with paper or a dry cloth
調味料方面, 用一匙羹雞粉, 一匙羹豉油, 一匙羹糖For seasoning, use a spoonful of chicken powder, a spoonful of light soy sauce, a spoonful of sugar
然後攪勻 And stir well
加兩匙羹粟米粉, 兩匙羹紹興酒, 少許五香粉, 兩匙羹麻油Add two tablespoons of corn flour, two tablespoons of Shaoxing wine, a little allspice powder, two tablespoons of sesame oil
然後攪勻 And stir well
加一隻雞蛋Add an egg
加三粒蒜頭 (壓成蒜蓉) Add three garlic (pressed into mashed garlic)
再加兩匙羹粟米粉Add two more spoonful of corn flour
然後攪勻 And stir well
把青蔥切成兩部分 Cut the shallot into two parts
前半部, 白色的部分是蔥白The first half is the white part of the shallot
把蔥白, 和後半部綠色的部分 切成細粒Cut the white portion and the green portion into small pieces
分開處理Separate processing
把排骨放入沸騰中的油Put ribs in boiling oil
慢慢煎炸Slowly frying
反轉另一面再煎炸Flip the other side and deep-fry
炸熟以後, 把排骨撈起冷卻, 把油過濾After deep-frying, pick up the ribs. Cool the ribs and filter the oil
再把油煮至沸騰, 再次把排骨放入沸騰中的油Re-boil the oil, and put the ribs in the boiling oil again
多餘的水份就會全部被抽出All excess water will be extracted out
這樣做法, 排骨就會很脆, 而且顏色很美In this way, the ribs will be more crispy and beautiful in color
一兩分鐘後, 排骨就會變金黃色, 可以撈起After a minute or two, the ribs will turn golden and can be picked up
糯米的調味料方面, 用兩匙羹蠔油, 一匙羹老抽, 一匙羹日本豉油, 一匙羹糖, 兩匙羹清水For the seasoning of glutinous rice, use two spoons of oyster sauce, one spoon of dark soy sauce, one spoon of Japanese soy sauce, one spoon of sugar, two spoons of water
然後攪勻 And stir well
用一個大碗, 先把排骨放在底部, 糯米放在排骨上面In a large bowl, place the ribs on the bottom first, and sticky rice on the top
加入已準備好的糯米調味料Add prepared glutinous rice seasoning
然後全部攪勻And mix it all
等待約十分鐘, 讓糯米把調味料吸收Wait about ten minutes for the glutinous rice to absorb the seasoning
可以開始蒸飯Can start steaming
可以用室溫水的蒸飯Steam rice with room temperature water
糯米蒸熟以後, 加入蔥白, 再蒸十分鐘After steaming the glutinous rice, add white part of the shallot and steam for another ten minutes
然後把火關掉, 焗幾分鐘後, 就可以加入青蔥Then turn off the fire, and after a few minutes, add the rest shallots
大功告成 ! You're done ! Yummy !
