📝 Ingredients
For Chicken Masala
Chicken – ½ kg
Red chili powder – 2 tbsp
Cumin (Zeera) powder – 1 tbsp
Coriander powder – 1 tbsp
Salt – 3 to 4 tsp (adjust to taste)
Turmeric (Haldi) – ½ tsp
Garam masala powder – 1 tsp
Bay leaves (Tez patta) – 2
Star anise (Badiyan) – 1
Cloves – 5
Black cardamom – 2
Nutmeg & mace (Jaifal & Jawitri) – small amount
Big cardamom powder – ½ tsp
Ginger garlic paste – 2 tbsp
Potatoes – 3 (cut into cubes)
Oil – 2 tbsp
Water – 2 cups

For Dum Layer
Tomatoes – 4 to 5 (round slices)
Dried plums (Aloo Bukhara) – 5 to 6
Whole green chilies – 8 to 10
Fresh mint leaves – ½ bunch
Fried onions – 2 tbsp
Yellow/orange food color – 1 tsp (optional)

For Rice
sila rice – 750 grams
Water for boiling
Salt – to taste
Bay leaves – 2
👉 Soak rice for 2 hours

🍳 Method
Step 1: Prepare Chicken Masala
Heat oil in a pot. Add chicken and ginger garlic paste. Cook until chicken changes color.
Add all spices ,subat garam masala and potatoes. Mix well.
Add 2 cups of water and cook on high flame until it boils.
Cook the water until it boils Turn off flame.

Step 2: Cook Rice
Boil water in a separate pot. Add salt and bay leaves.
Add soaked rice and cook until one-kani cooked.
Drain immediately. Do not overcook.

Step 3: Dum Process
In a large pot, spread chicken gravy at the bottom.
Layer tomatoes, aloo bukhara, green chilies, fried onions, and mint on top.
Sprinkle food color.
Add rice evenly on top.
Cook on high flame for 2 minutes, then cover and give dum on low flame for 10 minutes.
