One of the most popular recipes on my site is just straight-up, roasted hen of the woods. It's great. I was getting a lot of comments from people making it about variations between cultivated and wild hens, so I did a tutorial here and discuss a couple differences.
Both cultivated and wild hens will work obviously work, but wild will be better as they have less water, and are more firm and easy to toss in a bowl and season.
I go over two ways to make this, the basic version, and the OG restaurant version: how I would instruct cooks to prep them before service. After roasting these are great tucked into a bowl of pasta, tossed in a salad, or just eat the whole tray with a cold beer.
