Vegetarian Mexican tortilla, bean and sweetcorn casserole.

Ingredients (4 servings):
2 tbsp olive oil
1 red onion, diced
3 garlic cloves, minced
1 red pepper, chopped
150g (5.2oz) mushroom, sliced
1 can tomatoes (400g / 14oz)
1 can red kidney beans (400g / 14oz)
150g (5.3oz) sweetcorn
1 tbsp tomato puree
3 tbsp fresh cilantro, chopped + handful to garnish
1 tbsp taco seasoning
salt, black pepper
6 large tortillas
200g (2 cups) shredded cheddar cheese
Bake for 15-20 mins at 200C (400F).
