Welcome to Cravings!. Today, we're making delicious and crispy Moong Dal Kachori. Follow along for a perfect tea-time snack.
Ingredients:
For the Dough:
2 cups all-purpose flour
1/4 cup ghee or oil
Salt to taste
Water as needed
For the Filling:
1 cup moong dal (yellow split lentils)
2 tbsp oil
1 tsp cumin seeds
1 tsp fennel seeds
1/2 tsp asafoetida
2-3 green chilies, finely chopped
1 tsp ginger paste
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala
Salt to taste
2 tbsp chopped fresh coriander
Step 1: Preparing the Dough
In a large bowl, mix the all-purpose flour, ghee (or oil), and salt.
Gradually add water and knead the mixture into a soft dough.
Cover the dough with a damp cloth and let it rest for at least 30 minutes.
Step 2: Preparing the Filling
Soak the moong dal in water for 2 hours, then drain and coarsely grind it without adding water.
Heat oil in a pan, add cumin seeds, fennel seeds, and asafoetida.
Add chopped green chilies and ginger paste. Sauté for a minute.
Add the ground moong dal and cook on low heat, stirring continuously.
Add coriander powder, turmeric powder, garam masala, and salt. Mix well.
Cook the mixture until it becomes dry and aromatic.
Stir in the chopped coriander and let the filling cool.
Step 3: Assembling the Kachoris
Divide the dough into small lemon-sized balls.
Roll each ball into a small disc.
Place a spoonful of the filling in the center of each disc.
Gather the edges and seal the filling inside, forming a smooth ball.
Gently flatten each filled ball with your palms.
Step 4: Frying the Kachoris
Heat oil in a deep frying pan on medium heat.
Carefully slide the kachoris into the hot oil, a few at a time.
Fry until they turn golden brown and crispy on both sides.
Remove and drain on paper towels to remove excess oil.
Step 5: Serving
Serve the hot and crispy moong dal kachoris with tamarind chutney, mint chutney, or your favorite dip.
