一家有一家的麻婆豆腐,这就是麻婆豆腐的魅力。上个世纪80年代,改革开放以后,随着生活条件的提升,人们的生活思维方向从吃饱转变为吃好,于是麻婆豆腐的烹饪方法就从成都传到我们乡镇这里,我父亲也开始经营他的修理钟表的小本生意,于是每月他都要成都去购买一些钟表配件,他是一个特别喜欢吃的人,父亲靠记忆中味道把麻婆豆腐这道菜的味道和烹饪方式分享给我们。我记得邛崃川剧团来平乐古镇演出的时候,父亲总要做很多菜请他那些唱川剧的朋友们到我家作客。如今父亲不在了,但我永远记得麻婆豆腐里的肉臊和蒜苗香味。
Every family has its own version of Mapo Tofu,
and that’s the charm of this dish. After the reform and opening up in the 1980s, as living standards improved, people's focus shifted from just filling their bellies to enjoying good food. It was then that the recipe for Mapo Tofu spread from Chengdu to our small town. Around the same time, my father started his small clock and watch repair business. Every month, he would travel to Chengdu to buy clock and watch parts. Being someone who loved good food, he recalled the taste of Mapo Tofu from his memory and shared both the flavor and cooking method of this dish with us.
I remember when the Qionglai Sichuan Opera Troupe came to perform in Pingle Ancient Town, my father would always cook a lot of dishes and invite his friends from the troupe to dine at our home. Now that my father is no longer with us, I will always remember the smell of the minced meat sauce and garlic sprouts in his Mapo Tofu.
