Recreating authentic Sichuan Mapo Tofu at home with crispy beef, silky tofu, and numbing peppercorn heat. A bold, spicy comfort dish perfect over rice.
Ingredients:
2 tbsp Sichuan peppercorns (to dry roast and grind)
1 block firm tofu (cut into cubes)
1 tbsp salt (for blanching tofu)
500 grs Fatty ground beef
3 tbsp doubanjiang (spicy fermented broad bean paste)
Sichuan chili flakes
2 inches minced ginger
4 cloves of minced garlic
Freshly ground Sichuan peppercorns (added after roasting)
1½ tsp white pepper
1 cup beef broth
1 tbsp cornstarch + 2 tbsp water (slurry for thickening)
Sesame oil (for richness)
Toasted sesame seeds (for garnish and crunch)
Steamed white rice (for serving)
