If the sealer is not present, your stone will be at risk of staining. One of the most common household cleaners containing ammonia is “Windex”, so make sure to avoid using that product for cleaning your countertops. A better alternative to this is a mild detergent and water, which will work just fine.
Natural stone can sustain heat up to different temperatures, which vary depending on the exact material, but you should always use some sort of mat under hot dishes or cookware to avoid discoloration.
