Ingredients
12 medium squids (cleaned)
Tentacles (finely chopped)
1 large onion (finely chopped)
Green coriander (finely chopped)
1 lemon
2 tsp tomato sauce
1½ tsp ginger-garlic paste
Oil (as needed)
Salt (to taste)
½ tsp turmeric powder
½ tsp chilli powder
½ tsp jeera-coriander powder
½ tsp homemade masala
½ tsp fish masala
½ tsp chicken masala
½ tsp kitchen king masala
1 tsp green chilli sauce
1 tsp Dark soy sauce
Toothpicks
Method
Heat 2 tsp oil in a pan. Saute onions with a little salt until soft.
Add ginger-garlic paste and tomato sauce. Cook for 1 minute.
Add turmeric, chilli powder, jeera-coriander powder, homemade masala, chicken masala, and kitchen king masala. Fry for 2 minutes.
Add squid water and chopped tentacles. Cook for 3–4 minutes.
Add lemon juice, green chilli sauce, soy sauce, fish masala, and coriander.
Cover and steam for 5 minutes. Switch off flame and let it cool.
Marinate squid tubes with salt, ginger-garlic paste, turmeric, and lemon juice.
Rest for 5 minutes.
Stuff cooled filling into squids and secure with toothpicks.
Heat 2 tsp oil in a pan and shallow-fry squids for about 10 minutes, turning gently.
Garnish with coriander and serve hot.
