Ingredients:
For the Creamy Dressing:
Roasted red bell pepper – 1
Paneer – ½ cup
Soaked cashews – 8–10
Black pepper – to taste
Salt – to taste
Water – as needed for grinding
Lemon juice – 1 tbsp
Sriracha sauce – optional (for extra spice)
For the Salad:
Zucchini – boiled & sliced
Sweet corn – boiled
Broccoli – boiled
Lettuce leaves – torn
Cherry tomatoes – halved
Method:
Prepare the Dressing:
In a blender, add roasted red bell pepper, paneer, soaked cashews, salt, black pepper, and water.
Grind into a smooth, creamy dressing.
Add lemon juice and blend again.
Mix in Sriracha sauce if you like a spicy kick (optional).
Assemble the Salad:
In a large bowl, add boiled zucchini, corn, broccoli, lettuce, and cherry tomatoes.
Pour the prepared dressing over the vegetables.
Toss gently until everything is well coated.
