കേരളത്തിലെ ഇടുക്കി ജില്ലയിലുള്ള തൊടുപുഴ സ്വദേശിയായ ജാസ്മിൻ അജി, കാഴ്ചപരിമിതിയെ അതിജീവിച്ച് വിജയം കൊയ്ത ഒരു സംരംഭകയാണ്. പരമ്പരാഗത ഭക്ഷണപദാർത്ഥങ്ങൾ നിർമ്മിക്കുന്ന അപ്പൂസ് ഫുഡ്‌സ് (Appoos Foods) എന്ന സ്ഥാപനത്തിന്റെ സ്ഥാപകയാണിവർ ;2005-ൽ ഒരു അടുപ്പും രണ്ട് സഹായികളുമായി ആരംഭിച്ച ഈ സംരംഭം ഇന്ന് കേരളത്തിലെ പ്രമുഖ നെയ്യപ്പം നിർമ്മാണ യൂണിറ്റുകളിൽ ഒന്നാണ്. സെറിബ്രൽ പാൾസി ബാധിച്ച തന്റെ മകൻ അഖിലിന്റെ 'അപ്പു' എന്ന വിളിപ്പേരാണ് സ്ഥാപനത്തിന് നൽകിയിരിക്കുന്നത്.റെറ്റിനൈറ്റിസ് പിഗ്മെന്റോസ എന്ന രോഗം മൂലം 2011-ഓടെ ജാസ്മിന് പൂർണ്ണമായും കാഴ്ച നഷ്ടപ്പെട്ടു. പ്രതിമാസം ശരാശരി 1,500 കിലോഗ്രാം നെയ്യപ്പങ്ങൾ ഇവിടെ നിർമ്മിക്കുന്നു. കൂടാതെ അവലോസുപൊടി, പുട്ടുപൊടി തുടങ്ങിയ വൈവിധ്യമാർന്ന ഉൽപ്പന്നങ്ങളും വിപണിയിലെത്തിക്കുന്നുണ്ട്. സംരംഭകത്വത്തിലൂടെ നിരവധി സ്ത്രീകൾക്ക് തൊഴിൽ നൽകുന്ന ജാസ്മിൻ അജിക്ക്, മമ്മൂട്ടി മുഖ്യ രക്ഷാധികാരിയായ കൈരളി ടിവിയുടെ ജ്വാല അവാർഡ് നൽകി ആദരിച്ചു

Jasmine and her husband, Aji, faced significant challenges, including their son being diagnosed with cerebral palsy and Jasmine's own progressive vision loss due to retinitis pigmentosa, which led to complete blindness in 2011.
Inspired by a priest's advice to start a business, Jasmine began making traditional Kerala neyyappams (rice-based sweet fritters) at home, which her family and customers at her husband's store loved. She officially launched Appoos Foods in 2005, naming it after her son's nickname.
Growth and Production: The business, located in Thodupuzha, Kerala, started small but grew rapidly. Despite her vision loss, Jasmine manages production by relying on her keen senses of smell and touch, and the business now produces an average of 1,500 kilograms of neyyappams monthly.
Empowerment: Appoos Foods employs local women, providing them with a regular source of income and empowering them in their community.
