Cream boiled Sunchokes with chopped steak

For 4 people
500 gr sunchokes (jerusalem artichokes)
salt
lemon juice
Stowage:
20 g butter
2 tbsp. wheat flour
1 dl. boiling water
2 dl. cream
nutmeg
white Pepper
salt
Peel the Sunchokes and cut them into thick slices or share them a few times. Place them in cold water with a little lemon juice to prevent them to get dark before cooking.
Cook the Sunchokes approx. 4 minutes in lightly salted water for low heat. They should be tender with still have bite.
Let them drain in a sieve.
Stowage:
Melt the butter in a saucepan and stir in the flour in.
Add the boiling water and cream a little at a time and stir well all the time. Let the stew simmer approx. 5 minutes with frequent stirring until it thickens slightly.
Turn Jerusalem artichokes and warm gently stowing through. Season with salt, white pepper and a. a little nutmeg.
