Brown Sugar Cookies Recipe
Add these Eggnog Frosted Brown Sugar Cookies to your next cookie swap!
INGREDIENTS :
114 g salted butter
150 g light brown sugar
1 large egg
1 tsp vanilla bean paste
215 g all-purpose flour
1.5 tsp backing soda
1/8 tsp nutmeg
FROSTING :
114 g salted butter (room temperature)
220 g powdered sugar
1/8 tsp nutmeg
2-3 tbsp Eggnog
1/8 tsp rum extract
INSTRUCTIONS :
➡️ Line 2 backing sheets with parchment paper and set aside.
➡️ In a medium saucepan over medium heat melt the butter and bring it to a boil. Once it starts boiling stir constantly until the butter is no longer foamy and becomes a deep amber color. Remove from heat and allow butter to cool for 5-10 mins
➡️ Beat the browned butter and sugar together 1-2 min until light in color. Add vanilla and egg mix until fully combined.
➡️ Mix in the flour, backing soda and nutmeg untill fully combined. Place cookies in the fridge for 15 mins. While cookies are chilling, Preheat the oven to 350°F.
➡️ Using a cookie scoop divide the dough 15 equal size balls. Bake for 10-12 mins.
➡️ While the cookies are cooling prepare the frosting. In a large bowl, using an electric mixer beat the butter until fluffy.
➡️ On low speed add in powdered sugar and nutmeg, gradually increase to a medium speed until the ingredients are incorporated. Beat in the Eggnog and rum extract until the desired thickness is reached.
➡️ Frost the cooled cookies using a piping bag. Optionally, sprinkle with a little extra nutmeg.
