Today I visited an autumn farm in the middle of the mountains — a peaceful place filled with the sound of sheep bells, dry leaves under their feet, and a warm golden sunlight that made everything feel poetic.
Right there, I decided to cook a traditional Persian Chenjeh Kebab over fire.
I diced fresh beef tenderloin and a piece of lamb fat (3x3 cm), along with bell peppers and tomatoes. Then I marinated everything in saffron, fresh lemon juice, salt, pepper, and onions for about an hour to let the flavors settle in.
After that, I prepared a fire with hot charcoal, skewered the meat, and placed them over the flames. The aroma of the kebab mixed with the smell of freshly cooked Iranian rice and hot tea created an unforgettable atmosphere.
