Ingredients and Measurements:
For seasoning and cooking the fish:
6 swai fillets (any white fish will work)- about 3 cups of fish in total
salt and pepper to taste
1 tsp. garlic powder
1 tsp. cilantro (dried or fresh)
1 tsp. thyme (dried or fresh)
1 tsp. paprika
1 tsp. chili powder
1 tsp. all purpose seasoning
1/2 tsp. ginger powder
To make the fish cakes:
6-8 large potatoes boiled (about 4-5 cups potato)
1 medium sized onion grated
2 tbsp. fresh cilantro or 2 scallions chopped
5 wiri wiri peppers chopped (we used vinegar soaked ones, you can use fresh)
salt and pepper to taste
1 egg beaten
2 cups crushed crackers or breadcrumbs to coat them
****AFTER coating, let them sit in the fridge for 30 minutes so that they can firm up a bit (or they fall apart in the oil)
