Saoji Chicken Curry | Spicy Nagpuri Style Recipe

Ingredients:
• Onion: 2 (finely chopped)
• Coconut (grated): 1/2
• Chicken: 1 kg
• Coriander leaves: a few (for garnish)
• Ginger-Garlic Paste: 2 tbsp
• Fennel Seeds (Saunf): 1/2 tsp
• Cumin Seeds: 1/2 tsp
• Royal Cumin (Shahi Jeera): 1/2 tsp
• Coriander Seeds: 2 tbsp
• Poppy Seeds: 1 tsp
• Roasted Chana Dal: 1 tsp
• Rice: 1 tsp
• Turmeric Powder: 1/2 tsp
• Red Chilli Powder: 1 tsp
• Salt: to taste

Whole Spices:
• Bay Leaf: 2
• Cinnamon: 2 sticks
• Stone Flower (Dagad Phool): a few pieces
• Whole Red Chillies: 6
• Green Cardamom: 4
• Mace (Javitri): 1
• Black Pepper: 1/4 tsp
• Cloves: 1/4 tsp
• Black Cardamom: 1

Preparation Highlights:
• Roast whole spices, chana dal, rice, coconut, and poppy seeds until aromatic.
• Sauté onions in oil until golden and blend into a thick paste with roasted spices and coriander leaves.
• In a pressure cooker, heat oil, sear chicken on high flame, and mix with ginger-garlic paste, turmeric powder, red chilli powder, and salt.
• Add the prepared masala paste, water, and cook until the chicken is tender.
