Welcome to my kitchen!
I’m sharing the special story behind how I opened a café high in the mountains of Himachal Pradesh (India), served guests from around the world, and how my Aloo Paratha (potato stuffed Indian flatbread) became a global favourite. Plus: I’ll walk you through the complete recipe & secret tips that helped win people’s hearts through food.
Aloo paratha is a beloved Indian flatbread stuffed with spiced potatoes — a North Indian classic.
My version is fully vegan — we skip dairy/ghee and use plant-based alternatives and oil. (You’ll see how.)
The filling uses aromatic spices and fresh herbs that create big flavour in every bite.
Here is a quick ingredients list (watch the video for full details):
Whole wheat flour (or chapati/atta)
Boiled & mashed potatoes
Spices: cumin, coriander, fennel seeds, black pepper, dried mango powder (amchur), dry pomegranate seeds powder(anardana), roasted cumin seeds powder, rock salt
Fresh herbs: coriander leaves, green chillies, dry fenugreek leaves
Plant-based oil (for cooking), I have used Mustard Oil
Optional: vegan butter or non-dairy yoghurt for serving
And above all: love and care when you stuff & roll the paratha!
Tomato Chutney Ingredient
Tomatoes 4
less than hanful fresh green coriander
1/2 inch ginger
5-6 garlic cloves
Green Chillies according to the hot you prefer
Red Chilli Powder for vibrant red color(Degi laal mirch)
Pinch of black Salt
Rock Salt to taste
My secret tip from the mountain café:
Always serve the paratha hot, as soon as it comes off the tawa / skillet. A steam-puffed flatbread with golden brown spots will always win hearts. In my café, many international tourists told me: “this is the best paratha I’ve ever eaten!”
Also, treat the paratha as an experience — pair it with vibrant chutneys and a fresh side, and tell your story over it. That connection elevates the dish.
