Short Answer. Because Diode Mode, Resistance (Ω) Mode and Continuity Modes work differently. In each test mode multmeter sends different voltages and different test current to the circuit and measure different properties.
In Diode Mode. Multimeter sends high value test voltage to forward bias a diode or PN junction ~1.5V–3V (enough to turn on a diode) Measures voltage drop across component
Resistance Mode (Ω) Sends tiny current to measure how much the circuit resists it ~0.3V–0.7V (not enough to forward bias diodes) Measures resistance in ohms (R = V/I)
