2 medium potatoes – peeled & cubed
2 medium carrots – sliced
1 medium onion – sliced
2–3 garlic cloves – chopped
2 green chilies – slit
1 sprig curry leaves
½ tsp mustard seeds
½ tsp fenugreek seeds (optional)
½ tsp turmeric powder
1–1½ tsp curry powder
½–1 tsp chili powder (adjust to taste)
1 cup thick coconut milk
1 cup thin coconut milk
½ water
