In this video Katie shows you how to make a simple apple sauerkraut slaw. It's great on it's own or over pork chops!
Ingredients for 2 servings:
2 ½ cups of pre-made sauerkraut
1 teaspoon caraway seeds, or more if you’re so inclined
Salt and Pepper to taste
Pinch of ground cloves
1 teaspoon dried dill (or 1 tablespoon fresh if you’ve got it)
1 tablespoon olive oil
½ of an apple, cut into matchstick pieces
Directions:
1. Put the sauerkraut in a strainer over a bowl and vigorously squeeze out the excess liquid, then leave in the strainer to carry on draining for about 5 minutes. Your 2 ½ cups will turn into approximately 1 cup when squeezed and drained out.
2. Unless you want to drink the briny liquid, throw it away and place the sauerkraut back in the bowl.
3. Add the apple matchsticks, caraway seeds, pepper, cloves, dill, olive oil, and salt and pepper. Mix with a fork.
4. If you want to serve warm, heat over a skillet a for a quick pan fry. OR serve cold - it's good either way!
