The Ultimate Smashed Burger
Serves 2
Caramelised Onions
2 red onion
1 tbsp Worcestershire sauce
1 tbsp honey
Pinch of salt
Burger sauce
2 tbsp mayo
1 tbsp ketchup
1 tbsp sriracha
1 tsp English mustard
1 tsp Worcestershire sauce
1.5 tsp sugar
1 Gerkin, finely grated or chopped
Burger
200g good quality mince
1 tsp garlic granules
1 tsp Worcestershire sauce
Salt and pepper
To sever
brioche burger buns
burger cheese
Iceberg Lettuce
Tomatoes
Pickles
Chips
Finely slice your red onion, add to a pan with a little oil and cook on a medium high heat for around five minutes until soft. Now add a pinch of salt, honey and the Worcestershire sauce and cook for another 5 minutes until almost jam like.
Add everything for the burger sauce into a bowl and mix well with a pinch of salt.
Add the garlic, Worcestershire sauce, salt and pepper to the mince and mix well. Roll into patties, around 50 each.
Take a pan on a high heat, add the patties and smash with a metal utensil. Cook for a couple of minutes, flip, then add a slice of burger cheese and some of the onions. Add the pan lid and cook for a couple of minutes until the cheese has melted and the other side of the burger has cooked. Then add one patty on top of the other for a double patty…
Lightly toast your brioche buns in a hot, dry pan then load up your burgers.
A spoon of burger sauce, some iceberg, lettuce, tomato slices, pickle sliced, beef patties, and then top with extra burger sauce, extra onions, and a squirt of ketchup.
