Soya chunks are a high-protein, low-fat vegetarian "superfood" derived from defatted soy flour. They contain approximately 50–52g of protein per 100g, often exceeding meat and dairy. Spongy and neutral in taste, they must be soaked in hot water and squeezed before use in curries, pulao, or stir-fries.
Nutritional Value: Rich in calcium (656mg), iron (20mg), and fiber, they are excellent for bone health and immunity.
Health Benefits: High protein supports muscle growth, while fiber helps with digestion.
Culinary Uses: Act as a "blank canvas" absorbing flavors well, making them ideal for pulao, curries, and as a meat substitute.
Preparation: Soak in boiling water for 15 minutes, drain, and squeeze out all water before cooking to ensure a tender texture.
