Telangana Style Mamsam Kura
Ingredients (Serves 4)
Main
• Oil – 4 tbsp
• Shahi jeera – 1 tsp
• Black cardamom – 1 no
• Green cardamom – 3 nos
• Cinnamon – 1 inch
• Cloves – 4 nos
• Bay leaf – 1 no
• Black pepper (whole) – ½ tsp
• Onion (finely chopped) – 3 large (350 g)
• Green chilli (slit/chopped) – 3–4 nos
• Ginger–garlic paste – 2 tbsp
• Turmeric powder – ½ tsp
• Red chilli powder – 2–2½ tsp
• Salt – to taste
• Mutton (curry cut, bone-in) – 1 kg
• Hot water – 700–900 ml
• Tomato (finely chopped) – 2 medium (200 g)
Dry Masala (roasted & ground)
• Coriander seeds – 2 tbsp
• Cumin seeds – 1 tbsp
• Dry coconut – 3 tbsp
• Poppy seeds – 1 tbsp
• Black pepper – 1 tsp
• Cashew – 10–12 nos
• Cloves – 3 nos
• Green cardamom – 2 nos
• Nutmeg – a pinch
• Salt – ¼ tsp
Fresh (chopped)
• Green chilli – 2 nos
• Curry leaves – 2 sprigs
• Mint leaves – ¼ cup
• Fresh coriander – ½ cup
Finish
• Kasuri methi – 1 tsp
• Garam masala powder – 1 tsp

Method
1. Heat oil. Add shahi jeera, whole spices, bay leaf, black pepper; let crackle.
2. Add onions and salt; sauté till deep golden.
3. Add green chilli and ginger–garlic paste; sauté till aromatic.
4. Add turmeric and red chilli powder; mix.
5. Add mutton and salt; bhunao on high heat 8–10 minutes.
6. Add hot water, stir, cover and cook 7 minutes.
7. Add chopped tomatoes; cook till tomatoes soften and blend.
8. Add dry masala paste; cook 5–6 minutes till oil separates.
9. Cover and cook on low flame 45–60 minutes (or pressure cook 5–6 whistles) till mutton is tender.
10. Add chopped green chilli, curry leaves, mint, coriander; simmer 5 minutes.
11. Add kasuri methi and garam masala; simmer 2 minutes. Rest and serve.
