Easy-breezy Appetizer: Green Olive Tapenade

This week I turn one of my go-to snacks (Castelvetrano olives) into a salty yet bright, and surprising crunchy tapenade. Break out your favourite chilled white and a nice crusty loaf and enjoy.
1 - 290 ml bottle pitted Castelvetrano olives
1 clove garlic
2 tsp capers, drained
3 or 4 anchovy fillets
1/4 cup slivered almonds
1 tbsp fresh lemon juice
1/2 cup extra virgin olive oil
1. Give the bottled olives a quick rinse under cold water and load them into your food processor. Add the remaining ingredients and pulse a few times until you get a chunky paste. Add all but a few tablespoons of olive oil and continue pulsing until you get the texture you want. Add the reserved olive oil as needed to thin out the tapenade to your liking.
