8-10 apples (Gala or Golden Apples work best)
100 g sugar (organic sugarcane or imperial)
80 g unsweetened butter
1 box of frozen puff pastry sheet (2 sheets make 2 pie)

Short story about the Tarte Tatin:
This recipe came from Ms. Stephanie Tatin while working at her hotel "The Tatin" in the 1880s. She started to make a traditional apple pie but left the apples cooking in butter and sugar for too long. Smelling the burning, she tried to rescue the dish by putting the pastry base on top of the pan of apples and quickly finishing the cooking by putting the whole pan in the oven. She was surprised to find how much the hotel guests appreciated the dessert.
