Ice Cream Cake, Vegan Cooking Show by Kyong Weathersby

Описание: You and your family can enjoy refreshing healthy ice cream cake during hot summer or at any time. Low in Sugar, Low in Fat, Low in Calories, total plant based.

ICE CREAM CAKE

CAROB CAKE:

1 c whole wheat flour
¼ c carob powder
¼ c turbinado sugar
1 tsp stevia
¼ tsp salt
½ T aluminum-free baking powder
¼ c chopped walnuts
1 ¼ c soy milk
2 T vegetable oil
1 tsp vanilla

Preheat oven at 350 degrees. Put whole wheat flour, carob powder, turbinado sugar, stevia, salt, aluminum-free baking powder, and chopped walnuts in a mixing bowl. Mix well. Add soy milk, vegetable oil and vanilla and mix thoroughly. Spray oil in a 9 x 13 baked dish. Transfer the cake mixture in a baked dish and make it even. Bake for 25 minutes. Cool it complete. Delicious!

CAROB ICE CREAM:

1 (13.5 oz) can coconut milk
1 pkg tofu, firm, Mori-Nu silken
1/3 c carob powder
1/4 c turbinado sugar
1 tsp stevia
1/4 tsp sea salt
1 tsp vanilla

Blend all ingredients in a blender until smooth & creamy.

ICE CREAM CAKE: Pour the ice cream mixture into a cake and put it in a freezer for overnight. When you are ready to serve the ice cream cake, take the ice cream cake out from the freezer, and let it thaw in room temperature for 1 hour. Cut and serve. You may put left over ice cream cake in an individual plastic container and freeze until it is needed.
