🥒 TRADITIONAL TZATZIKI RECIPE
Ingredients
1/4 cucumber, grated
1-2 tsp extra-virgin olive oil
1/2 cup Greek yoghurt
1/4 lemon juice
1 garlic clove, minced
Fresh chives, finely sliced
Salt and pepper
Method
Mix together all ingredients.
Taste and adjust salt (add pepper if desired).
🧄 SUPER GARLICKY TZATZIKI RECIPE
Ingredients
1/4 cucumber, grated
1-2 tsp extra-virgin olive oil, plus extra for roasting the head of garlic
1/2 cup greek yoghurt
1/4 lemon juice
1 head of garlic
1 garlic clove sliced
1/2 garlic clove, grated (ideally on a Microplane)
Fresh chives, finely sliced
Butter
Salt and pepper
Method
Preheat oven to 180C (350F). Chop head off bulb of garlic, drown in EVOO and wrap in tin foil
Roast garlic for 30-45 minutes
Meanwhile, slice one clove of garlic and fry in butter on medium heat until it turns tan-brown
Mix together all ingredients
Taste and adjust salt (add pepper if desired)
