Ingredients:
500 mL container of sour cream
300 mL can of sweetened condensed milk
850g can of mango pulp/or fresh pureed mango
1L container of whipping cream
For garnishing:
Sliced almonds
Crushed pistachios
Fresh mango chunks
Preparation:
1. In a large bowl add the sour cream, sweetened condensed milk, and mango pulp. Fresh mango is not always available to, so this is a great alternative!
(Note: if you are using fresh mango, grind the mango, you may need to add sugar. Also be sure to run the mango puree through a sieve to get a smooth consistency)
2. Mix the ingredients well with a spatula and/or whisk
3. Next, slowly add small batches of whipping cream and fold into the mixture. Be sure to fold in or the mixture will lose the light, mousse-like texture. (TIP: leave your whipping cream out at room temperature for several minutes to soften it, or if frozen defrost in the fridge and then leave it out at room temperature for several minutes.)
4. Once it is fully incorporated, refrigerate mango matho for several hours before serving.
5. Garnish when serving with sliced almonds, crushed pistachios, fresh mango. This recipe makes a large batch, perfect for a dinner/party.
