Shortbread Stars:
Shortbread stars are buttery, crumbly cookies shaped like stars, made with a simple mixture of butter, sugar, and flour. They have a rich, melt-in-your-mouth texture and a delicate sweetness, perfect for enjoying with tea or coffee. Often dusted with powdered sugar or decorated with icing, they're a festive treat for holidays or special occasions.
Ingredients:
2 ½ cups plain flour
1 tablespoon cornflour
250g butter, softened
½ teaspoon vanilla essence
⅓ cup caster sugar
Extra flour for rolling and caster sugar for sprinkling
Method:
1. Preheat oven to 150 ℃.
2. Sift flour and cornflour together in a bowl, then set aside.
3. Beat butter and vanilla, then gradually add caster sugar and continue beating until mixture is fluffy and white in colour.
4. Using a wooden spoon, gradually fold in sifted flours and mix until combined and until crumbly.
5. Lightly flour the bench and roll about half the dough to about 5mm thick. Cut into stars with floured biscuit cutter. Push together the remaining dough and roll out until all the dough is used, don’t add too much additional flour to the dough.
6. Place stars on a baking tray lined with baking paper, sprinkle with caster sugar and bake for 15 - 20 minutes or until a pale straw colour and firm to touch.
7. Let cool in the tray before placing on a wire rack to cool completely.
Styling Tip:
Arrange shortbread stars in a circular pattern on a festive platter, overlapping slightly for a layered look. Dust lightly with powdered sugar for a snowy effect. Garnish with small sprigs of rosemary or a few red currants to create a holiday vibe.
