Bocconotti with almond paste and jam
Ingredients for the dough
g . 500 of flour, g . 200 of sugar
g . 200 of margarine, 1 egg, 2 egg yolks
Bocconotti whit almond one packet of levitated, grated lemon rind
Mix well all ingredients , dissolving the yeast in ml . 20 of milk, form the dough into a ball , wrap with plastic wrap and refrigerate for 15-20 minutes
Almond paste
g. 300 almond, g. 300 sugar
2 egg whites, ml.30 of limoncello
Put the shelled almonds in boiling water for 1 minute, then drain and let them cool and peel. Blend the almonds adding the sugar, egg whites and limoncello. Blend until the mixture is smooth.
On waxed paper place a piece of dough with a little flour , cover the dough with another sheet of paper , roll out with a rolling pin to form a sheet of 3-4 mm. Take the molds, cover with foil, place the dough obtained in special molds, put to the inside almond paste and jam, close the "bocconotti" cake sealing ends well . Bake at 180 degrees for 15 minutes. Bocconotti with almond paste and jam are delicious treats of Salento.
