Ingredients:
Paratha Dough:
Wheat flour (Atta) - 5 cups
Salt (Namak) - 1 tsp
Water - 2.5 cups approx. (As need)
Oil - 2 tbsp
Paratha Mixture:
Mooli (Radish) - 1 large (Finely grated)
Red chilli flakes (Kuti laal mirch) - 1 tsp
Crushed roasted coriander (Bhuna kuta dhania) - 1 tsp
Crushed roasted cumin (Bhuna kuta zeera) - 1 tsp
Turmeric powder (Haldi) - 1/2 tsp
Carom seeds (Ajwain) - 1/4 tsp
Salt (Namak) - 1 tsp
Garam masala powder - 1/2 tsp
Green chilli (Hari mirch) - 2 small (Chopped)
Cilantro (Dhania) - 1/4 cup (Chopped)
Directions:
Step 1 - Prepare Paratha Dough
Wheat flour (Atta) - 5 cups
Salt (Namak) - 1 tsp
Mix well
Water - 2.5 cups approx. (As need)
Knead the dough (4-5 mins)
Oil - 2 tbsp
Knead for another min
Cover and set aside for at least half hour

Step 2 - Prepare Mooli Mixture
Mooli (Radish) - 1 large (Finely grated)
Tip: Remove excess water from mooli by squeezing
Red chilli flakes (Kuti laal mirch) - 1 tsp
Crushed roasted coriander (Bhuna kuta dhania) - 1 tsp
Crushed roasted cumin (Bhuna kuta zeera) - 1 tsp
Turmeric powder (Haldi) - 1/2 tsp
Carom seeds (Ajwain) - 1/4 tsp
Salt (Namak) - 1 tsp
Garam masala powder - 1/2 tsp
Green chilli (Hari mirch) - 2 small (Chopped)
Cilantro (Dhania) - 1/4 cup (Chopped)
Mix well
Step 3 - Prepare Paratha
Make dough balls
Roll 2 dough into paratha
Apply ghee
Add filling
Cover 1 paratha with the other and close edges
Gently flatten
Add paratha to hot tawa/pan
Cook each side until golden brown (2 mins each side)
Dish out and serve with yogurt (dahi)
