240g Coconut sugar 椰糖
300ml Water 水
1kg Pork belly without skin 去皮五花肉
5 tbsp Garlic 蒜末 5汤匙
1.5 tbsp Sesame oil 麻油 1.5汤匙
3 tbsp Oyster sauce 耗油 3汤匙
4.5 tbsp Light soy sauce 生抽 4.5汤匙
3 tbsp Dark soy sauce 老抽 3汤匙
1.Cook coconut sugar + water until the coconut sugar is dissolved - Strain and set aside
将马六甲椰糖碎 + 水煮至椰糖融化 - 过滤 - 待冷却
2.After the coconut sugar liquid has cooled - Mix the ingredient A until well combined - Marinate for 30 minutes
椰糖汁冷却后 - 将所有材料A混合均匀 - 腌制30分钟
3.Transfer the pork belly + marinade sauce into the pot (You can add a little more water if needed, to cover 2/3 of the pork belly) - Cover the pot with a lid - Bring to a boil over high heat - Then reduce to low heat
倒入五花肉 + 所有腌制酱汁 (可以再加入适量的水以覆盖2/3五花肉) - 盖上锅盖,大火煮至沸腾后转小火继续焖煮
4.Flip over the pork belly every 20-30 minutes during the simmering process
焖煮中的每20-30分钟将五花肉翻面 - 防止锅底烧焦
5.Simmer until the sauce is thicken and bubbling (about 2 hours)
焖煮至酱汁变得浓稠、起大泡泡即可(大约2个小时)
6.Remove the Char Siew from heat and slice then serve
起锅 - 把叉烧切片,趁热食用
7.Add the caramel sauce on the Char Siew to make it more tasty
叉烧本身其实已经很够味,觉得不够味的话,可淋上叉烧酱汁调味
