Chocobutternut Muffins With Chocolate Chips
Hey lovelies~! Here's another recipe for y'all to try at home! I have so many Muffin recipe requests but I didn't what flavor to do. Luckily I had some leftover chocobutternut toppings from my previous Chocobutternut Pandesal recipe video (link: • DELICIOUS CHOCO BUTTERNUT PANDESAL | How T... ) so I went ahead the use those because 1.) I hate wasting food and 2.) I know many of you likes chocobutternut :D During the making of this recipe I accidentally put in cinnamon powder instead of cocoa powder.... but it was a wonderful and delicious cinnamon muffin discovery so feel free to swap the cocoa powder for cinnamon if you wanna try it. You can also skip the chocobutternut topping since the base is chocolate muffins with chocolate chips, it's already good on its own :) Please enjoy!
How to Make Chocobutternut Muffins
Yields: 14 small muffins (cupcake size) or 6-7 regular muffins
Preheated Oven: 220°C (428°F) then bring down to 180°C (356°F) after 3 minutes
Bake Time: 18 minutes
INGREDIENTS:

~Chocobutternut Toppings~
60 g (1/2 cup) CONFECTIONER'S SUGAR
*Also known as Powdered Sugar and Icing Sugar. I'm just using a fancy term :))
84 g (1 cup) DESSICATED COCONUT, FINE
55 g (1/4 cup) UNSALTED BUTTER, MELTED
ORANGE FOOD COLORING
~Glaze~
60 g (1/2 cup) CONFECTIONER'S SUGAR
30 ml (2 tbsp) MILK
2 ml (1/2 tsp) VANILLA EXTRACT
~Chocolate Chip Muffins~
2 large EGGS
59 ml (1/4 cup)
VEGETABLE OIL
55 g (1/4 cup) UNSALTED BUTTER, MELTED
5 ml (1 tsp) VANILLA EXTRACT
250 g (1 1/4 cup) SUGAR
237 ml (1 cup) MILK
*Use whole milk is possible. Evaporated works fine too but I like the richness in whole milk for this much better
240 g (2 cups) ALL PURPOSE FLOUR
*Use a weighing scale or do the spoon and level method if you don't have one
3 g (1/2 tsp) SALT
3 g (1/2 tsp) BAKING SODA
10 g (2 1/2 tsp) BAKING POWDER
50 g (1/2 cup) COCOA POWDER, DUTCH PROCESSED
*Or use Cinnamon Powder because my clumsy self accidentally discovered a yummy cinnamon with chocolate chip muffins :D
170 g (3/4 cup) CHOCOLATE CHIPS
*I used bitter sweet chocolate but feel free to use whatever you like
*Bake the muffins in a pre-heated 220°C (428°F) oven for 3 minutes then bring the temperature down to 180°C (356°F) and bake for 15 minutes.
