Ingredients:
1 tbsp extra-virgin olive oil
200g bacon roughly chopped
1.5kg beef brisket trimmed of fat, chuck steak or stewing beef cut into 2-inch chunks
1 carrot large, sliced ½-inch thick
1 white onion large, diced
4 cloves garlic, minced
Salt/black ground pepper to season
2 tbsp flour
12-15 pearl onions small, peeled
200g white or chestnut button mushrooms, cleaned and quartered
2 tbsp butter
750ml red wine - I used pinot noir but a burgundy would be perfect for this.
500ml beef stock
2 tbsp tomato paste
1 beef bouillon cube crushed - I used Freja bone broth powder
Herb bouquet - fresh thyme, rosemary, oregano, 3 bay leaves
fresh parsley finely chopped to garnish
