This is the perfect tip for whenever you are using fresh fruit in cakes, cupcakes or even muffins! Whether it’s blueberries, raspberries, chopped strawberries, etc. , it’s important to give them a coat of flour to help to prevent the fruit from sinking once it is baked. Do this for fruits that carry a bunch of moisture like berries (especially blueberries).

Although the fruit may still sink a bit, this makes it less likely for that to occur and helps to thicken the fruit juices a little bit. It ensures that your cake has no soggy spots due to that extra moisture in the fruit. It also helps to freeze the berries just until firm before tossing it into the flour to prevent fruit streaks in the muffin.

If you choose to use dehydrated fruits in your cakes, be sure to just soak them a little bit to prevent them from absorbing too much of the muffins moisture. Dehydrated fruits also pack a lot of great flavour too!
